For gratinated pancakes, wash and clean the fruit or let the frozen fruit thaw. Mix with half of sugar and spices, fill pancakes with it.
Place in a small shallow dish. Mix the curd cheese until smooth, sweeten and season. Beat egg whites with a little salt, add remaining sugar and beat until very stiff. Fold into the curd.
Spread the mixture over the pancakes and bake in an oven preheated to 180 °C until the surface is nicely browned, opening little or not at all!
Arrange and serve.
Preparation Tip:
Pancakes au gratin taste very good with vanilla sauce, whipped cream or a fruit sauce. The fruits are freely selectable according to your own taste and season. The gratinated pancakes are also very good to use fruit.
