Sweat the finely diced shallots in the butter, add the whipping cream and boil gently. Pour in the clear soup and let it bubble up. Pluck the leaves from the washed chervil, heat in the clear soup and finely grind everything together in the hand mixer. Season to taste with salt and freshly ground pepper.

A good ingredient for this soup: fresh shrimps (the ones from Büsum are exceptionally good (!).
