Instructions:

For the Salami Vegetable Pancakes with Mozzarella, finely dice the salami, spring onions and garlic, and finely dice the tomatoes and mozzarella.

Heat a little oil and sauté the spring onions with the salami. Sprinkle in paprika powder, quickly deglaze with vinegar and add a little water. Add garlic, vegetable mixture and tomatoes, cover and simmer briefly. Season to taste with salt and pepper.

Mix eggs, milk, a dash of vegetable oil, flour and a pinch of salt to a pancake batter. Heat a little oil in a pan and pour in some batter. Allow to set briefly.

Spread some of the vegetable mixture on one half of the pancake, cover with mozzarella cubes and fold the second half over it. Press down lightly. Put lid on and let sit over minimal heat until cheese is well melted. (Or finish baking in not too hot oven).

Bake the remaining salami and vegetable pancakes with mozzarella in the same way.
