Place the well boned salmon trout fillets skin side down in a container. For variation I, mix the spices and sprinkle over the fish. Cover with plastic wrap and let marinate for 1-2 days. For Variant II, finely grind pepper, coriander and bay leaf in a discarded coffee grinder or place in a cloth and crush. Mix with sugar and salt and sprinkle on fish fillets.
