For the watercress salad, mix honey, vinegar and olive oil and season with salt and pepper.
Cut the green onion into fine rings, pluck the mozzarella into coarse pieces, peel the mango and cut it into thin slices.
Mix the watercress and basil with the dressing, reserving 4 tablespoons.
Spread the salad flat on a plate, place the mango and the mozzarella on top. Sprinkle with the Land-Leben croutons as well as the young onion and drizzle with the remaining dressing and serve the watercress salad.
Preparation Tip:
If you like, you can serve the watercress salad sprinkled with a few pine nuts. This gives the salad a wonderful nutty flavor.
