Beat the egg whites until stiff and gently fold in alternately with the poppy seeds and flour mixed with the salt of hartshorn. For the curd mixture of the poppy seed curd cake: Cream the butter with the sugar, vanilla sugar and egg yolks, then add the curd, potato starch and rum. Beat the egg whites until firm and fold in carefully. Spread the cake mixture onto a rimmed baking sheet lined with parchment paper. Spread the curd mixture in a lattice shape on the poppy seed dough and bake in a preheated oven at 200 °C for approx. 50 minutes.
