Instructions:

For the poppy seed semolina pudding, place milk, butter, sugar, salt and poppy seeds in an unperforated steamer basket.

For the compote, peel, core and dice apples. Mix with sugar, vanilla pulp, apple juice and cider in an unperforated steamer basket. Place in steamer together with poppy seed milk and cook (at 100°C for 5 minutes).

Remove the poppy seed milk. Stir in semolina and let rest for 1-2 minutes. Stir again and cook again, stirring once during cooking time (at 100°C 1 minute).

Remove semolina pudding, stir and let rest covered for 5 minutes. Continue cooking apple compote until apples are soft but not falling apart (at 100°C 5-8 minutes).

Separate egg, beat egg white until stiff. Stir egg yolks into semolina pudding, gently fold in beaten egg whites. Pour pudding into 6 cold rinsed portion molds or small cups (100-125 ml each) and let cool. Cover apple compote and let cool as well.

Turn out poppy seed semolina pudding onto plates and serve with apple compote.
