For the Strawberry-Obers Flammerie, wash the strawberries, remove the blossom end and cut into pieces. Set aside. Put the milk and the whipped cream together in a high saucepan (remove 3 tablespoons full beforehand to mix the cornstarch) and bring to the boil.
Mix the cornstarch with the sugar in 3 tablespoons of milk-cream mixture and add to the boiling milk-cream while stirring. Continue stirring and boil for 2 minutes.
Then let the flummery cool down a bit. Keep stirring to prevent a skin from forming. Layer the strawberries and flummery alternately in a tall glass. Finish with strawberries.
Preparation Tip:
Sprinkle the strawberry and cream flummery with chopped pistachios or coconut flakes at the end.
