For the red lentil soup, place the lentils in a fine-mesh strainer, rinse with water and drain.

Clean, wash or peel and finely dice the greens. Peel the onions and cut them into small cubes.

Heat the margarine in a saucepan. Sauté the onion cubes in it until translucent. Add the chopped greens and let them simmer for about 5 minutes while stirring.

Add the vegetable soup and the lentils and bring everything to the boil. Cook the soup for about 30 minutes and then puree.

Stir in the soy milk and bring to the boil again. Season to taste with salt, pepper, cumin and paprika powder.

Serve the red lentil soup sprinkled with paprika powder and herbs (wild garlic, chives or parsley).

Preparation Tip:

You can use other lentils, but red lentils make a nicer color.
