For the baked peaches, drain the peaches well in a colander, reserving the juice. Place peaches, round side up, in a shallow ovenproof dish.

Beat the yolks, crème fraîche, 3 tablespoons peach juice and vanilla sugar in a bowl with a hand mixer until fluffy. Then pour over the peaches.

Sprinkle with sugar and bake in a preheated oven at 220° C until golden brown. Before serving, quickly sprinkle the baked peaches with powdered sugar.

Preparation Tip:

Serve with vanilla ice cream with the baked peaches.
