Instructions:

For the birthday sponge cake with raspberry and curd filling, first prepare the sponge. To do this, whisk the egg whites with the water until stiff, then add the sugar and salt while continuing to whisk.

Fold in the beaten egg yolks. In a separate bowl, sift the cornflour with the flour, baking powder and cocoa and gently fold into the egg mixture. Finally, gently stir the butter into the batter.

Line the bottom of a cake springform pan (26 cm diameter) with baking paper and pour in the batter, smoothing it out.

Bake the sponge dough at 180°C for 35 to 40 minutes.

For the cream filling, heat the lemon zest, sugar, milk and cornflour in a saucepan and bring to the boil, stirring constantly. Then set aside to cool.

Mix the curd into the milk mixture. Mix butter and powdered sugar until creamy and add the milk-curd mixture by the tablespoonful. Place in the refrigerator.

Once the sponge cake has cooled, cut it in half horizontally. Spread the base with the cream and sprinkle the raspberries on top. Place the lid on the cream layer.

Cover the cake with warmed raspberry jam. Refrigerate the cake.

For the decoration, first roll out and cut a long strip of marzipan, about 12-14 centimeters wide. Use this to wrap the cake once all around, sideways, so that you can’t see the intersections and the cream filling. This step is necessary because the rolled fondant should not come into contact with cream fillings.

Roll out about 3/4 of the rolled fondant thinly and evenly and cover the cake with it, then smooth it out.

Color remaining rolled fondant with food coloring, roll out and cut out circles and hearts with cookie cutters. Decorate the birthday sponge cake with raspberry topping filling with the colorful shapes and finally decorate with homemade flag garland.
