Instructions:

For the char loaf, pluck the char fillet into smaller pieces. Mix with lemon juice, sour cream and chives, marinate for approx. 10 minutes.

Form small loafs and slowly fry in olive oil in a coated pan (about 1 – 2 minutes per side).

Slice potatoes and fry in sunflower oil until crispy on both sides, then add salt.

Slowly steam pumpkin pieces in a pot with white balsamic vinegar, sugar, water and salt until firm to the bite and let cool slightly.

Arrange the char loaves with pumpkin vegetables and slices of potatoes. Garnish with sour cream and herbs.
