Finely chop the shrimp and crab meat, chop the mushrooms and mix both together with the minced meat, with sugar, salt, pepper and sesame oil. Mix well with the cornflour and stir in the chopped coriander. Place the pastry sheets on top and put a little filling mixture in the center of each. If desired, cut out round and fold into crescent shaped pouches or fold the corners over each other to form a triangle. Moisten the edges of the dough with water and press down well. Place on a steamer insert and steam in a bamboo basket (or pot), covered, for 8-10 minutes. Drizzle wontons with a little sesame oil and sprinkle with freshly chopped or grated ginger. Best served in the basket.

The filling of these wontons can be modified as desired, such as chopped roasted peanuts, freshly chopped ginger or chili.
