For the Baked Mushrooms Stuffed with Cod, defrost the fish fillets and spinach leaves. Wash the mushrooms, carefully pat dry and remove the stems. Heat canola oil in a frying pan, brown the mushrooms on both sides and place in a baking dish.

Cut the defrosted fish into small cubes (about 1 cm) and fry in hot oil. Add onion and defrosted spinach to the pan, season with salt, garlic and pepper and mix well.

Cover the mushroom tops with the spinach mixture, sprinkle with some breadcrumbs and parmesan and bake the baked mushrooms stuffed with cod in the oven at high top heat (220 °C) until golden brown.

Serve mushrooms as an appetizer with a vegetable variation, for example with a grilled red bell pepper.

Preparation Tip:

The mushrooms can be refined with a few dashes of balsamic vinegar. Thus, the baked mushrooms stuffed with cod taste even spicier.
