For the Zürcher Geschnetzelte, cut the meat into thin strips and chop the onion into small cubes. Heat oil and sauté onion until translucent. Add the meat and fry it all around.

Remove meat and onion, add flour and brown briefly. Immediately deglaze with stock and whipping cream, stirring constantly to form a lump.

Stir in sour cream and mustard and simmer gently/thicken for about 10 minutes. Add meat and onion and bring to a boil again briefly. Season with salt, pepper and chives.

Serve Zürcher Geschnetzeltes with rice.
