For the Brimsennockerl, first grate or mix the raw potatoes on a very fine grater.
Add salt, egg and flour and mix well. For the flour, you should start with 100 g and then, depending on the quality of the potatoes, add the rest until the dough reaches a thin consistency.
Then put the dough on a board and with a grater put small pieces in a pot of boiling salted water.
Add sour cream to the brimsen as needed and stir to combine.
Cut the bacon into cubes or thin strips and fry in a small pan.
When the gnocchi are done, they should float to the top in the water. Then strain and place in a bowl. To serve, mix gnocchi with brimsen and garnish the brimsen gnocchi with the bacon.

Green salad goes well with Brimsennockerl.
