Instructions:

For the poppy seed dough, first separate the eggs. Beat the egg whites until stiff. Beat the yolks with the sugar and vanilla sugar until foamy. Stir in oil and water alternately. Sift flour with salt, poppy seeds and baking powder and fold in alternately with the beaten egg whites. Finally, carefully fold in the cherries.

Line a baking tray with baking paper and spread the batter on it. Preheat the oven to 180 °C.

For the curd cheese lattice, first separate the eggs. Mix the yolks with the curd, sugar, vanilla sugar and lemon zest. Whip the egg whites until stiff and fold in carefully.

Fill the mixture into a piping bag with a large nozzle and pipe it onto the dough in a grid pattern.

Bake the cake in the preheated oven for about 30 minutes.

Let cool on the baking tray and sprinkle with powdered sugar before serving.

In autumn & winter, this fruity quilt cake can be prepared with cherries from a jar or other canned fruit: Drain the fruit thoroughly, cut into small pieces if necessary and process according to the recipe.
