For the salmon tartare on avocado cream, first cut the salmon into very small cubes or chop finely. Peel and finely dice the garlic. Wash the young onion and cut into rings. Finely chop the coriander leaves. Cut avocado in half, remove pit and peel. Season the flesh with garlic, the white of the young onion, sesame oil, lime juice, lime zest, cilantro, olive oil, sea salt and pepper. Season salmon with sea salt, pepper and add black sesame seeds. Refrigerate for about 15 minutes.

Meanwhile, wash and pluck lettuce and marinate lightly with balsamic, olive oil and honey. Put avocado cream in a metal ring and press it well on the plate. Place salmon tartare on top and press down as well. Mix the green from the young onion with black sesame seeds and put on the tartar.
