For the marzipan cookies, quickly knead a shortbread dough using all ingredients except marzipan, jam and chocolate icing. Wrap in plastic wrap and chill for 30 minutes.
Roll out the dough to a thickness of 3 mm, cut out round cookies, place on a coated baking tray and bake in a preheated oven at 200 °C until light.
Mix marzipan and jam together, spread on the cookies like a dome and glaze with warmed chocolate icing.
