For the cookies, sift the flour into a suitable bowl and add the sugar, vanilla sugar and salt. Once everything is well mixed, add the egg and the butter (preferably cut into small cubes or flakes) to the mixture and mix well using a dough hook.

When the ingredients have combined into a crumbly mass, continue to knead the dough by hand. Only when the dough is evenly combined, form a ball and let the dough rest for at least an hour. This will make it easier to cut out cookies.

Bake the cookies in a heated oven at 160 degrees convection for between 10-15 minutes, depending on size and thickness. It is best to bake a few test cookies, as the baking time can vary depending on the oven. This also depends on your own preference for crispier or softer cookies.

Preparation Tip:

Without sugar and with 1/2 tsp salt, the basic dough becomes a shortcrust pastry for savory fillings.
