Instructions:

For the soufflés, warmly beat the yolks with half of the sugar and the vanilla pod over steam. Then stir in the melted chocolate (Miele steamer 100 °C – 2 minutes) and the mocha.

Beat the egg whites (with a pinch of salt) with the remaining sugar until stiff and stir in the yolk mixture. Pour the mixture into buttered and sugared molds. Place the soufflé molds in the Miele combi steam oven and bake at the following setting:

Setting: combi-cooking 1st step: hot air plus 200 °C / 100% humidity/ bake for 15 – 20 minutes.

Serve the coffee and chocolate soufflé fresh from the steamer.
