For the carrot bread, pour the warm water into the mixing bowl of the food processor and then slowly dissolve the yeast in it while stirring. Now add the remaining ingredients and mix for about 10 minutes with the mixer.

Now cover the dough and let it rest for about 1 hour. Butter a loaf pan. Knead the risen bread with your hands and pour it into the loaf pan. Cover again and let rise again for 1 hour.

Then brush the bread with water, sprinkle with sunflower seeds or sesame seeds if desired, and place in the oven. Bake in a convection oven at 190 degrees for about 45 minutes.

Remove from oven and let cool in the pan for a quarter of an hour. Then remove the bread and let it cool completely.
