For the lemon-banana jam, wash jars and lids, boil and disinfect with a little rum.
Peel the bananas. Cut 3-4 of them into pieces, mash the rest. Wash the lemons, grate the peel and squeeze the juice.
Put bananas, lemon juice and zest, vanilla bean grate and jelling sugar in a pot and boil for 5 minutes.
Pour the lemon-banana jam into the prepared jars as hot as possible and seal immediately.
Preparation Tip:
If you don't like banana chunks in the lemon banana jam, just puree everything.
