Rinse and finely chop the kitchen herbs, mix in 1/2 chopped chopped lettuce. Stir egg yolk, Íl and juice of one lemon, add whipped cream, season with salt and freshly ground pepper to taste. Chop the hard-boiled eggs and add them to the sauce together with the herbs.

Green sauce is usually served with ox meat, boiled, peeled potatoes or fish. However, it has also appeared on some plates next to asparagus spears.
