In a saucepan, heat fat until hot. Fold in the flour until it is brown.

Add the vegetables and, when they are well cooked, pour clear soup or water over them.

Season with salt, pepper and a little thyme.

Simmer on low heat for about 30 minutes. Sprinkle with parsley.

Serve with boiled potatoes
