Rolled ham: core ham e.g. from the nut, boneless, with only thin pork rind, moist cured, warm smoked, rolled and laced.

Cook the rolled ham in 80 °C hot water for 120 minutes. Prepare a paste of orange peel, mustard, orange juice and honey, season with pepper and marinate the rolled ham with it.

Roll out the puff pastry accordingly and wrap the ham in it. Brush with egg yolk. Place the wrapped ham in the oven heated to 200 °C for half an hour.

If there is any paste left, mix it with whipped cream and serve with the ham.

Tip: Always use an aromatic ham, it will give your dish a wonderful touch!
