For the Gröstl slices, peel and grate potatoes, season with salt and pepper. Peel and chop the onion.

Fry the onion in butter or oil and add the potato mixture. Fry out nice big rösti, similar to thick pancakes. However, these should not be cooked through.

Grease casserole dish and spread half of the fried rösti mixture on the bottom. Fry strips of pancetta until crispy and place on top of the hash brown mixture.

Beat eggs, add salt, pepper and possibly additional spices, according to taste. You can also just fry fried egg with bacon and put it in the middle. In this case, the slices only need to be put in the oven for 20-30 minutes.

Preheat the oven to 180°C (upper-lower heat). Pour the egg mixture on the bacon and hash browns layer and spread the rest of the hash browns mixture on top. Leave to bake in the oven for 1 hour.

Meanwhile, grate a good handful of horseradish. Mix with sour cream and/or creme fraiche and olive oil as well as pressed garlic, tarragon or marjoram and salt to make a horseradish sauce and refrigerate.

Add creamed spinach and the dish is ready. Simply cut out Gröstl slices from the baking dish and serve with spinach and the cold Krensauce.
