Remove peel from potatoes and grate with a rösti grater, sprinkle with salt and pepper.

Fry bacon cubes in hot butter until translucent, add Cervelats and roast for two minutes.

Mix the potatoes with half of the cheese and roast for ten minutes. Turn everything together on the other side and form into a cake, spread bacon-cervelat mixture evenly over it, roast for another ten min. Just before the end of the roasting time, spread the remaining cheese evenly on the surface and let it melt with the lid closed.

Roast the fried eggs in hot clarified butter, season and arrange on the rösti.

Served together with leaf salad a nutritious lunch!
