Steamed or possibly boiled kale is excellent in flavor. After the first frost it tastes best. When preparing it tolerates a lot of fat.
Finely weigh the cabbage freed from stalks, put it in a saucepan with a piece of smoked pork belly and a little water and simmer until the cabbage begins to roast. Season with salt and a pinch of sugar. Serve with boiled or possibly fried potatoes.
