Instructions:

For the focaccia with grapes and cheese, first dissolve the yeast and sugar in 50 ml of water and let it rise for 15 minutes. In the meantime, grate the rosemary and chop finely.

Knead the remaining water, olive oil, yeast mixture, both types of flour, thyme and salt into a smooth dough. Leave to rise in a warm place for about 45 minutes.

In the meantime, wash the grapes, dry them well and cut them in half. Cut the cheese into cubes.

Line a baking pan (e.g. large springform pan) with baking paper or grease it. Roll out the dough to the size of the pan and place it in the pan. Press the grapes into it. Leave to rise for half an hour.

Preheat the oven to 180 °C top/bottom heat. Sprinkle the cheese on the focaccia and drizzle some olive oil over it. Add salt and pepper. Put the focaccia with grapes and cheese in the oven for about half an hour.
