For the Mediterranean couscous pan, first toast the pine nuts in a pan without fat and set aside.

Bring the water for the couscous to the boil and pour it over the couscous. Let it stand for about 5 minutes (or according to the package instructions). Pour off excess liquid if necessary.

In the meantime, drain the sun-dried tomatoes and cut into cubes. Peel and finely dice onion and garlic. Wash the bell bell pepper, remove seeds and stalk and cut into strips.

Heat a little oil in a pan (preferably from the dried tomatoes) and fry the onion and garlic in it. Deglaze with tomato sauce. Add peppers and simmer until they are soft. Season with salt, pepper and chili.
