Fruity Salad with Rocket Pesto

For the arugula pesto, first roast the pine nuts in a hot pan without adding any fat.

In the meantime, wash the arugula, spin dry, also wash an apricot, remove the seeds and cut into small pieces.

Now finely strain the arugula together with the pine nuts, the apricot pieces and the olive oil. Season the pesto with lime juice, salt and pepper.

For the salad, wash the bell bell pepper, remove the seeds and cut into fine strips. Also wash the remaining apricots, remove the seeds and also cut into wedges. Dice the feta cheese. Wash the lettuce and spin dry. Peel the onion and cut into fine rings.

Finally, just mix all the ingredients for the fruity salad recipe and serve together with the rocket pesto.

If you like the rocket pesto a little more fruity, you can add 1-2 tablespoons of apricot juice.
