For ovenproof ramekins, about 18 cm ø.
Prepare the curd butter dough (knead all ingredients well together), rest a little and then roll out to a thickness of approx. 5 mm (sprinkle the base sufficiently with flour).
Cut out round “Michel lids” from the dough (slightly smaller in diameter than the ramekins) and place on a baking tray lined with parchment paper, brush with egg (perhaps decorate with leftover dough in a star shape).
Bake at 200 °C for about twenty minutes (preheat the oven well).
Place the muenster cheese in the gratin dishes and score a few times in the middle so that it melts better. Put the pre-baked lids on top and bake for another twenty minutes at 200°C.
Serve: Bring to the table with cranberries or elderberry jelly and green leaf salad.
