Make long grain rice according to the instructions. Sauté the diced onion in the fat until translucent. Rinse the zucchini, remove the stems, cut in half, lift out part of the flesh, dice the zucchini flesh, add to the onion, stew briefly, add the cooked long-grain rice and season the whole thing with salt, pepper and oregano. Place the zucchini halves in an ovenproof dish.

Place the sliced cured pork in the zucchini halves, spread the long grain rice evenly on top and cover with the cheese slices (or strips). Pour the vegetable soup into the dish, place everything together in the oven and cook at 200 °C (electric) or level 3-4 (gas) for 25 minutes.

Tip: Zucchini is a type of pumpkin and therefore low in calories, rich in vitamins and easy to digest – just the thing for a light meal!
