Quickly knead all the ingredients for the dough and chill it for about 30 minutes.
Roll out the dough to a thickness of approx. 2-3 mm and cut out the cookies.
Brush with milk and sprinkle with the sliced, toasted almond flakes and press down lightly.
Bake the cookies in the preheated oven at 180 °C for about 10 minutes.

For a change you can dip the classic Spekulatius cookies in chocolate icing
