Cream butter until creamy. Add vanilla sugar, egg yolks, sugar and finely grated lemon zest, stir repeatedly. Mix flour with candied lemon peel, raisins, slivered almonds and orgeat and add this mixture to the whisked ingredients form and stir.

Grease a baking tray and place small heaps of dough on it with two teaspoons. Bake the St. Nicholas rolls at 225 degrees Celsius in the preheated oven for about 12-15 minutes.
