Remove peel from papayas, cut in half and remove seeds. Halve from new and cut into slices, drizzle with lime juice. Rinse the arugula. Mix vinegar and half of the olive oil with salt and pepper to make a salad dressing.

Cut the shrimp tails lengthwise. Remove the intestines under running water, rub the shrimp dry. Roast in remaining olive oil for two to three min.

To serve, loosely divide arugula, papaya and shrimp evenly on plates and drizzle with salad dressing.
