For the coffee mousse, beat egg yolks with 4 tablespoons sugar until light and fluffy. Hold the bowl over a water bath and continue beating until the mixture thickens. Stir in the coffee powder and remove from the water bath to cool.

Whip the heavy cream in a large bowl until stiff and fold into the egg mixture. Beat the egg whites until stiff and stir in the remaining sugar. Gently fold the beaten egg whites into the coffee mixture.

Pour the mixture into dessert glasses and place in the freezer for at least 1.5 hours. Twenty minutes before serving, the mousse should be taken out of the freezer. To serve, decorate the coffee mousse with some whipped cream.

Preparation Tip:

The coffee mousse tastes particularly refined if you drizzle it with a few drops of coffee liqueur before serving and garnish it with a coffee bean dipped in chocolate.
