Heat water, fill a standard coffee filter half full with coffee and half full with chicory. Pour the boiling water over it. (The Breton does not have a coffee maker!). Following the French slogan “caf, bouillu, caf, pas foutu” (roughly: boiling coffee = edible coffee), fill the coffee in a bol no less than 1/2 l. Add cognac with about the volume of two fingers (two if they are fingers of a peasant, four if they are of a Parisian). Add two slices of bread and it’s ready. Uncle Jean’s tip: it’s best to use stale bread, because you can’t tell that dipped bread is stale.
