For the clear vegetable soup Asiastyle, clean the vegetables and cut them into strips. Bring the water and ginger to a boil with a good dash of soy sauce.
First add the carrots, mushrooms and celeriac, boil for a few minutes. Then add the rest of the vegetables and cook just briefly.
