Instructions:

For the Christmas spice cake with pickled orange and grapfruit fillets, prepare all the necessary ingredients.

For the spice cake, mix the whipped cream with the sugar, vanilla sugar and eggs until the sugar is dissolved. Add the gingerbread spice.

Sift in the flour with the baking powder and stir into the mixture with the salt and lemon zest. Butter a baking sheet and dust it with flour. Spread the dough evenly on this baking sheet. Bake in a heated oven at 190 °C for about 10 minutes.

For the topping, melt the butter in a saucepan. Glaze the coarsely chopped walnuts in it and add the sugar, ginger, cinnamon and cloves. Pour in the whipped cream and bring to the boil once. Peel, core and roughly grate the apples.

Sprinkle with juice of one lemon and squeeze well in a tea towel. Now stir the apples into the boiled topping and spread everything together on the pre-baked dough. Bake in the preheated oven at 200 °C for about 10 minutes.

For the pickled orange and grapefruit fillets, peel the oranges and grapefruits until the flesh is visible. Then, using a sharp kitchen knife, cleanly separate the fillets between the membranes.

Caramelize sugar and honey in a saucepan, extinguish with juice of one lemon, add star anise, vanilla pulp and grenadine. Pour in orange juice and boil.

Add the orange and grapefruit fillets, toss.

Preparation Tip:

The Christmas spice cake with pickled orange and grapfruit fillets also harmonizes very well with a scoop of vanilla ice cream when enjoyed lukewarm
