For the spelt rice pancake, place the walnuts on a flat plate.

In a thick-bottomed saucepan, stir 4 tablespoons of sugar until the sugar becomes liquid and caramelizes (turns brown). Be careful, liquid sugar is very hot! Using a spoon, drizzle the liquid sugar over the walnuts and let cool.

2-3 hours before using, empty berries into a bowl and let thaw. Bring half of the berries to a boil and season with 1-2 tablespoons honey, add the rest of the berries, stir in, remove from heat and set aside.

Chop the nut mixture medium fine. Melt butter, roast chopped nuts with sugar in it. Stir in the cooked spelt rice.

Once everything is well toasted, serve the spelt rice pancake with berries and yogurt and decorate with the caramelized walnuts.
