Rinse the strawberries and rub dry with kitchen roll. Remove the stem and halve or quarter the fruit according to size. Slit the vanilla pods lengthwise, scrape out the pulp and mix with the sugar. Mix the strawberries with half of the vanilla sugar and the lemon zest. Cover the fruit with plastic wrap and refrigerate for half an hour. In the meantime, beat the mascarpone with a mixer until fluffy, adding the honey and eggnog at the end. Beat the egg whites, add the remaining vanilla sugar and beat until stiff. Carefully fold the snow into the mascarpone cream with the strawberries. Place the dessert in small baking bowls or on plates, sprinkle with powdered sugar and serve on the spot.
