Instructions:

For the salad with quinoa and avocado dressing, first of all, cook the black quinoa in double the amount of water and let it cool.

For the dressing, mash the flesh of the avocado, lemon and orange juice, mustard, honey, salt and pepper to a thin cream. Season to taste.

Cut the iceberg lettuce into small pieces, cut the peppers into fine strips. Cut the cocktail tomatoes into halves. Chop the garlic.
