To make the melanzani parcels, wash the melanzani, pat dry and cut long thin strips with a slicer or grater. Brush a grill pan with a little vegetable oil and lightly grill the slices in it.

Remove the slices of melanzani, salt them and let them cool well. Put the curd in a bowl and mix with egg yolk, garlic, parmesan and basil and season with salt and pepper.

Butter the ovenproof ramekins ( 12 of them) and line them with strips of melanzani, letting the strips hang over the edge, then cover the top of the parcels. Spread the curd mixture into the ramekins, about 2 tablespoons per ramekin.

Fold the overhanging edges of the melanzani over the curd mixture and cook in a preheated oven at 180 degrees, bottom rack, for about 15 minutes.

Remove the ramekins from the oven, turn out onto serving plates and serve the melanzani parcels with tomato or bell pepper salsa, crisp lettuce and baguette.

Preparation Tip:

Melanzani packets are a fine Mediterranean appetizer. But you can also enjoy them as a snack or a light evening meal, because they also taste delicious cold.
