For the melanzani rolls, clean the melanzani and cut lengthwise into slices. Place in salted water for 20 minutes. Then pat dry with kitchen paper.

Heat 3 tbsp oil in a frying pan and fry the melanzani slices on both sides until golden brown. Peel and chop onion and garlic cloves.

Sauté in 2 tbsp hot olive oil. Add minced meat and fry. Add tomato paste, 125 ml water, red wine and the spices.

Preheat oven to 180 degrees (convection oven 160 degrees). Cover the melanzan slices with the minced mixture, roll up and pin.

Place in a baking dish, brush with the remaining oil and bake the melanzani rolls in the oven for about 25 minutes.

Preparation Tip:

Melanzani rolls are best served with a tomato sauce and rice. If I make small rolls, they are best served as an appetizer or on a party buffet. Enjoyed with a yogurt sauce, they taste just as good.
