For the granola, mix all dry ingredients (rolled oats, nuts, quinoa, coconut chips, chia) in large bowl. Add sunflower oil (or melted coconut fat), cinnamon , salt and vanilla sugar.
Heat water, cane sugar, maple syrup (alternatively honey) in a saucepan until sugar is completely dissolved. Then empty into a bowl and mix well.
Put baking paper on a baking sheet and spread the contents of the bowl on it. Bake for 15 minutes at hot air, 140 °C, then stir granola roughly.
Continue baking at 160 °C for about 30 minutes until granola turns golden. Remove granola from oven and let cool.
Add ½ cup of dried fruit (figs, dates, mango, raisins,…) to the granola, fill into an airtight container or bag – done.
Preparation Tip:
After 30 minutes of baking time, keep checking the granola. It can also be that it takes longer/shorter until the granola takes on a golden yellow color (oven dependent). Stir again in between roughly does not hurt.
