For the chocolate parfait, first brush a terrine mold with oil and line with plastic wrap. Chop the chocolate, mix the cocoa with water, bring to the boil, add the chocolate and let it melt.

Add rum, stir through and let cool. Beat eggs, yolks, sugar, vanilla sugar and a pinch of salt over steam until creamy, then place in a cold water bath and let cool.

Whip the cream until stiff and mix about 1/3 of it with the egg mixture and chocolate mixture. Gently fold in the remaining whipped cream.

Pour the mixture into the mold, cover with plastic wrap and freeze for 6 hours. For the strawberry sauce, puree the strawberries and mix with powdered sugar (to taste).

Cut the parfait into slices and serve with the strawberry sauce.

Preparation Tip:

The chocolate parfait is of course also delicious with other fruity sauces.
