For the cheese spaetzle, first of all make the spaetzle dough by mixing all the ingredients into a smooth dough.
Bring salted water to a boil and rub the dough into the boiling water with a spaetzle grater. Once the spaetzle rise to the surface, strain and place in a pan.
Mix the grated cheese into the spaetzle and, if desired, season the cheese spaetzle with parsley and soup seasoning.

You can also add spinach or ham to the cheese spaetzle.
