For the apple and curd cheese muffins, first soak the raisins in rum. Preheat the oven to 170 degrees. Mix the curd with sugar, yolk, vanilla pulp and starch until creamy.

Wash the apples, cut out the core, cut into eighths and slice. Sprinkle with lemon juice. Unroll the puff pastry and spread with the curd mixture. Leave one long side free.
